Cheese puffs

Ingredients
3/4 cup Water
5 tbspn Butter
1/2 t Salt
1/8 t pepper
1 cup flour
4 large eggs
1 3/4 grated Mozzarella cheese
1/4 chopped parsley
1/2 grated Parmesan cheese

Method
Preheat your oven at 220°C.
Bring water, butter, salt & pepper to the boil in pot.
Add flour and stir to form thick sauce.
Cook for 2 minutes until it dries out and form a ball.
Leave to cool.
Add eggs and mix thoroughly.
Add cheeses and mix well.
Form round balls on baking sheet.
Sprinkle some parmesan cheese over top.
Bake for 10 minutes at 220°C & then 20-25 minutes at 190°C, until golden.
