Lynne's Pumpkin Fritters with Syrup
Ingredients for fritters
2 cups flour
1 cup sugar
2 cups cooked pumpkin (butternut or pumpkin)
2 tsp ground cinnamon
3 tsp baking powder
2 eggs
1/4 cup milk

Method
Sift dry ingredients together, then add the rest and mix good. Make sure the batter is thicker than that of a pancake batter or similar to banana bread batter. Add more flour to ensure the right consistency is obtained, for a nice round ball to puff up when frying. If the batter is runny, you will get a flat fritter.

Ingredients for the syrup
2 cups of sugar
1 cup of milk
1 cup of water
3 tbs of Mazina or cornflour
1 spn Butter
1 tbsp of ground cinnamon
1 cup of milk
1 cup of water
3 tbs of Mazina or cornflour
1 spn Butter
1 tbsp of ground cinnamon
Method
All ingredients except Mazina / Cornflour to a pot and cook. Dissolve cornflour in a little bit of water and add to dissolved sugar mixture and cook slightly until syrup is thick. Pour syrup over warm fritters.
Batter yield 30 medium sized fritters.
Serve warm.
