Cauliflower, chickpea & coconut curry recipe

Ingredients 

1 cut cauliflower 
1 can drained, tin chickpeas 
300ml coconut milk
1 chopped onion
2 cloves garlic 
Half a chopped red pepper 
2 chopped tomatoes 
1 cup chopped green beans 
1 large spoon curry powder
Fresh rocket or coriander

Method

Fry onion & pepper till soft. 
Add curry powder and garlic. 
Fry for a minute
Add tomato and cook for 2 minutes. 
Add chickpeas, cauliflower, coconut milk & half a cup of water.
Simmer for 20 min. 
Add green beans and simmer for a further 10 min. 

Garnish with rocket or coriander.
