Sugar-free Vegan Protein Muffins
Ingredients
½ cup plain all purpose flour
¼ cup buckwheat flour
2 heaped scoops SynerChi Vegan Protein Powder
½ cup peanut butter
1½ tsp baking powder
1 cup applesauce (unsweetened)
½ cup SynerChi cacao nibs
Pinch of SynerChi Organics chia seeds for garnish. (Optional)

Method
Preheat the oven to 200 degrees celsius
Line a muffin tin with 8 greased muffin tins and set aside.
Mix the dry ingredients in a large bowl. Add peanut butter and unsweetened applesauce.
Mix until fully combined.
Stir in the chocolate chips
Divide the batter amongst the muffin tins and bake for 15-18 minutes.
Garnish with chia seeds.
Allow to cool for 10 minutes, before transferring to a wire rack to cool completely.
