Lynne's Pina Colada Pie Tart


Lynne's Pina Colada Tart

Ingredients



500g Coffee creamer / powder milk or Cremora
100ml boiling water
150ml coconut cream
1 tin Condensed Milk
400ml lemon juice
1 pack Digestives or Tennis biscuits
1 tin pineapple pieces

Method

In a large bowl, mix the coffee creamer with the boiling water and mix until there are no lumps.
Add coconut cream and whisk.
Place in the refrigerator.

Once cold, whisk with electric mixer to thick and fluffy. Add the Condensed Milk and whip a little longer. Now add the lemon juice and whip until well incorporated. The mixture will be very thick, glossy and white.

Add most of the pineapple pieces.

Use a large tart dish and pack the biscuits on the base. Spoon the entire mixture onto the biscuit base.

Decorate with mint and pineapple and refrigerate.
Keep refrigerated.
