Chicken Livers
Chicken Livers recipe
Ingredients
1 onion
5T olive oil
1 chopped chili
3T chopped parsley
1t coriander
1t cumin
1t curry powder
1T Worcester sauce
About 400g halved Free-range chicken livers
2 cups cream
1 tin chopped tomatoes
1t paprika
8 chopped fresh cloves garlic
Method
Sweat chopped onion and then add chopped garlic cloves & chopped chili in 2T olive oil and lightly fry. Add the dry ingredients and fry for another minute.
Empty the can chopped tomatoes & Worcester sauce into the onion, chili and garlic mixture; season and cook for 10 minutes. Add the cream and blend with a stick blender.
Season the chicken livers and fry in the rest of the olive oil, until cooked through.
Then mix with the tomato sauce and fry for 10 minutes.
Top with chopped parsley and serve with toasted Ciabatta.
